Chicken w/ leeks and fennel

Ingredients
  • 1 to 2 cups Grilled chicken breast or thighs chopped small

  • 3 TBLS Olive oil

  • 1 cup diced leeks

  • 1 cup diced fennel

  • 1 cup diced carrots

  • 1 cup cooked brown rice

  • 1 to 2 tbls low sodium soy sauce

  • 1 tsp vegasal/ salt

  • 1 sp black pepper

Directions
  1. Grill chicken till done but moist, breast about25 min, thighs about 15 min

  2. 2.Cook rice

  3. 3.Pour olive oil in large skillet heat

  4. Add fennel and carrots, saute for about 10 min

  5. Add leeks, continue sauting for about 5 min

  6. Add salt and pepper

  7. Add rest of ingredients, Rice, chicken, soy sauce

  8. Stir ocassionaly for another 5 min or so

  9. 9.serve as a main dish

  10. I have added broccolli also!
