Spinach Salad
Ingredients

½ cup plain or vanilla low-fat yogurt

2 T of reduced sugar apple juice or orange juice

½ t of cinnamon

2 large apples cut into cubes (Red, though you could use both red and green for added color.)

½ cup of small red seedless grapes (whole)

½ cup of small green seedless grapes (whole)

¾ cup chopped walnuts
-
4 cups of spinach
1.Mix juice, yogurt and cinnamon.
2.Mix in grapes, walnuts, and apples.
3.Place spinach in a large bowl.
4.Combine the yogurt mixture with the spinach.
This works well with your choice of fruits: strawberries, kiwi, mango etc.
