Spinach Salad

  • ½ cup plain or vanilla low-fat yogurt

  • 2 T of reduced sugar apple juice or orange juice

  • ½ t of cinnamon

  • 2 large apples cut into cubes (Red, though you could use both red and green for added color.)

  • ½ cup of small red seedless grapes (whole)

  • ½ cup of small green seedless grapes (whole)

  • ¾ cup chopped walnuts

  • 4 cups of spinach

  1. 1.Mix juice, yogurt and cinnamon.

  2. 2.Mix in grapes, walnuts, and apples.

  3. 3.Place spinach in a large bowl.

  4. 4.Combine the yogurt mixture with the spinach.

  5. This works well with your choice of fruits: strawberries, kiwi, mango etc.
