Rice Salad

  • 1 cup of of brown rice medley (long grain brown rice,barley and daikon radish seeds) Trader Joe's carries it or Texmati Rice Medley from Giant

  • 1/2 yellow, 1/2 green and 1/2 red peppers chopped

  • 1/2 cup or less chopped carrots, 1/3 cup salted sunflower seeds, 1/2 cup chopped celery or less

  • Salad dressing: 1/4 cup olive oil or less, 3tbs balsamic vinegar, 3 cloves garlic chopped, salt and pepper and pinch of sugar

  1. Cook rice, let stand 10 minutes, add salad dressing and mix with the rest of ingredients
