Scrambled Eggs in Crisp Potato Skins

  • 3 large cooked baking potatoes, cut in half and scooped out (leave a 1 inch shell)

  • 1 1/2 tsp olive oil

  • Paprika

  • Nonstick cooking spray

  • 1/2 cup each diced red and green pepper

  • 12 egg substitutes, beaten

  • 2 Tbsp reduced fat or fat free cream cheese

  1. Preheat the oven to 400 degrees. Place the scooped out potato skins on a baking sheet. Brush the skins with oil. Dust each shell with paprika. Bake in the oven for 20 minutes.

  2. To prepare the eggs, place a nonstick skillet over medium heat and spray the skillet lightly with cooking spray. Add the peppers and saute for 5 minutes.

  3. Add the eggs and cook about 5 minutes until eggs are set. Add the cream cheese and blend in well.

  4. To serve, pile the eggs into the potato shells and dust with more paprika.

people need to stop being so afraid of eggs-especially the yolks-that's were all the protein is. also,fried eggs are fine-it's the oil or butter that you cook them in. i use a little olive oil or nothing in a nonstick pan. also eggs are a great weight lose food-just don't overdo it.

i think using real eggs is better then using egg substitutes all the preservatives added to them to make them keep.. no thanks..

I agree with you Eggbeaters is expensive and I can't afford it. I've been eating one poach egg on one toast and sometimes scram.eggs. My B/S did not spike up except if I eat oatmeal. So I guess the oatmeal have too much carbs for me. Now that is my breakfast everyday. I never tried eating white eggs only. Have a good one! Lol:-)

Is it safe to eat 3 egg whites instead of the Eggbeaters? I have to economize and Eggbeaters at my local market are pricey.
