Fresh Salsa

  • 6-8 Ripe Tomatoes (I use Plum) Chopped(You can remove the seeds if you want)

  • 1 Medium Red Onion Diced

  • 1 Medium Bell Pepper Diced ( I use Green, but red is fine)

  • 1/2 Bunch Cilantro Chopped

  • 1-2 Jalapeno Peppers ( I remove seeds and ribs) Finely Diced

  • 2 cloves of Garlic Minced or Grated

  • Juice of 2 Limes

  • Good Pinch of Coarse Salt(Either Kosher or Sea Salt)

  • Fresh Ground Black Pepper

  • 2-3 Tbsp of Extra Virgin Olive Oil

  1. Mix all ingredients well. Place in container with an air tight lid. Will keep in fridge for 10 days.(If it last that long) This is good served with chips and tortillas. Also great served on beans, nachos, and just about anything else you want. If the jalapenos are not hot enough you can add some crushed red pepper flakes.
