Dramatically Seared Green Beans

  • 2tbsp. canola or peanut oil

  • 1 lb. whole green beans, trimmed

  • 2 lg.cloves of garlic ( minced )

  • 1/8-1/4 tsp. red-pepper flakes

  1. PLACE large,deep skillet or wok over medium heat. After about 2 mins. add oil and swirl to coat pan.

  2. Raise heat to high and wait about 30 seconds. Add green beans, and season to taste.Cook 3 mins.,shaking pan and /or using tungs to turn and move beans so they cook quickly and evenly. Carefully taste beans ( may be crunchy ) and cook until desired doneness.

  3. SEASON with garlic and red-pepper flakes to taste. Cook 1 min. longer. Serve hot,warm or at room temp.
