Parmesan Asparagus

Ingredients
  • 1. 1 Tbsp butter

  • 2. 1/4 Cup olive oil

  • 3. 1 lb. fresh asparagus spears, trimmed

  • 4. 3/4 cup grated parmesan cheese

  • * salt and pepper to taste

Directions
  1. Melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan cheese, salt and pepper.

A variation of this would be to blanch fresh four asparagus spears for about 10 seconds, take two sheets of filo bread, lay asparagus on the bread, sprinkle with parmesan cheese. Bake in over 350 degrees till filo bread is brown.
