Bacon-Wrapped Pork Tenderloin

By Kaiyle

 Bacon-Wrapped Pork Tenderloin
  • 1 Pork Tenderloin (about 1 1/4 lb)

  • 3 Scallions, trimmed and cut lengthwise in strips

  • 5 Strips of lower sodium bacon

  1. Heat oven to 425 degrees. Make a long slit lengthwise down center of pork, being careful not to cut all the way through.

  2. Open the pork like a book. Place scallions on one cut side of pork; fold pork back over to close.

  3. Wrap bacon slices around pork to cover completely. Place in small roasting pan.

  4. Rub 1/2 tsp pepper and 1 Packet of your choice of sugar sweetener over bacon. Roast 20 minutes or until instant-read thermometer inserted in center reads 150 degrees. Let stand for 10 minutes before slicing.

"Rub 1/2 tsp pepper and 1 Packet of your choice of sugar sweetener over bacon." Not in the ingredients list.

I'll be trying this the next time a lot of the guys come to the hunt club. But what are the other items on the plate? A stuffed mushroom? What is the sauce?

That sounds Delicious!! I know I will try this one. I did try bacon wrapped white meat turkey and that was good.. I did not make it tho, I bought it that way in Walmart, a box of 2 for under $4.00.

This is a VERY good meat!! I have a man that is a meat and potatoes kind of person, so being diabetic it is kind of a challenge to get his meat and potatoes and still be able to eat! However, he ate this up, even with it having the sugar sweetener on it! He asked how the bacon got so sweet, I just told him it was my little trick!! LOL! Great recipe, will be trying this one again and again and again!!!

this looks good but think i will try it with turkey bacon to cut down on the fat, but may need to add some olive oil to keep moist

I know what you mean Mechelle. I didn't know it would be so good, right down to the last savory bite.
