Spinach Tacos

Ingredients
  • 1 large bag frozen spinach

  • 1 medium onion

  • 2 teaspoons margarine

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 1/8 teaspoon cayenne pepper

  • 8 corn tortillas

  • 1/4 cup canola oil

  • 1 tomato diced

Directions
  1. Dice onion, place margarine in a frying pan, let it melt then add onions. Cook over medium heat until onions become translucent.

  2. Add spinach (still frozen) to the pan and sprinkle with all of the spices. Cook over medium heat until the spinach is thawed and hot.

  3. In a small fry pan place the oil and heat on medium until hot. Place a corn tortilla in it and fold over to make a taco shell. You can cook them very hard or soft. Drain on paper towel and cook the remaining tortillas.

  4. Dice the tomato and set aside.

  5. Place 2 tablespoons of the spinach mixture into each tortilla and top with diced tomato.
