Lemon garlic chicken is easy to incorporate with a variety of side dishes and is good any time of year.

Easy Slow Cooker Lemony Garlic Chicken Breast
  • 1 tsp oregano

  • 1/4 tsp black pepper

  • 2 lbs boneless, skinless chicken breasts (six halves)

  • 1 tbsp olive oil

  • 1/4 cup water

  • 3 tbsp lemon juice

  • 2 tsp minced garlic

  • 1 tsp chicken bouillon granules

  • 1 tsp parsley

  1. Mix oregano and pepper and sprinkle evenly over chicken pieces.

  2. In a large non-stick skillet, using medium heat, brown chicken evenly on both sides in olive oil.

  3. Mix remaining ingredients and pour over chicken, bringing mixture to a gentle boil.

  4. Pour skillet contents into slow cooker, cover, and cook on low for 6 hours (3 hours on high).

  5. Chicken is very tasty served on a bed of brown rice with steamed carrots!

It's in my crock pot now only I doubled the reciepe since I cook for a family of 7 (well the twins don;t eat solids yet) But instead of using the boillion and water I used my homemade chicken broth that I add no salt to.

Since I also need to watch the amount of cholesterol in my diet, I made this dish but removed the salt and the bouillin granules. great dish.

Thank you for this recipe. However, I improvised the recipe since I live by myself: I double the quantities of the ingredients, except the chicken (I have a big crockpot). Instead of browning the chicken in a skillet, I put them all in the crockpot, cook in low for 3 hours, and then enjoy the aroma coming from the pot!

Valley Brook,

I don't bother cutting down recipes = I go ahead and prepare them and then portion them out and put the extras in the freezer for my take to work lunches. It is a great way to watch what you eat and what you spend! Plus it takes just as much energy to cook 1 portion as 4 so you end up saving energy.

It's a win-win!

Does anyone have receipes for a small slow cooker? I only cook for myself and it's hard to cut down receiipes to 1-2 servings.
