Oven Fries - WW Friendly - Tried & True

Ingredients

1-1/4 lb baking potatoes, peeled and cut into 1/2" strips

3/4 t salt

1/2 t sugar

4 t oil
-
1 t paprika
Preheat the oven to 450 degrees F; spray a nonstick baking sheet with nonstick cooking spray.
In a large bowl, combine the potato strips, 1/2 t of the salt and the sugar with cold water to cover. Soak 15 minutes; drain and blot dry.
In another large bowl, toss the potatoes with the oil and paprika. Place in a single layer on the baking sheet. Bake, turning the potatoes over as they brown, until cooked through and crisp, about 45 minutes. Sprinkle with the remaining 1/2 teaspoon of the salt.

we use the salt in the water when soaking but we don't use it for seasoning at the end.
Can you cut the salt? Or do you need the salt for them? I'm on a low salt diet, just wondering if these can be made without salt.
I like these but I only use different seasonings. oven fries are great!
