Low Carb/Fat Corn Quiche

  • 2 T Italian Bread Crumbs

  • 12oz Tofu (drained and cubed)

  • 2 Egg Whites

  • 1 Whole Egg

  • 1/3 C Skim Milk

  • 1/2 t Dried Oregano

  • 2 Cloves Fresh Garlic (chopped)

  • 1 C Shredded Cheddar Cheese

  • 1/8 C Parmesean Cheese

  • 1 7oz Can of Corn with Sweet Peppers (drained)

  • 1/8 C Finely Chopped Red Onion

  • 1 Medium Tomato

  • 1 T Fresh Parsley (snipped)

  • Optional Ingredients: (any one or combinations will add some zip to the tofu)

  • 1/4 C Sundried Tomatoes (Chopped)

  • 2 T Chopped Black Olives

  • 1 Med Jalepeno Pepper (finely Chopped)

  • Use a smoked cheese in lieu of cheddar

  1. Spray the bottom of a 9" glass pie plate with non stick cooking spray. Sprinkle bread crumbs into dish. Roll bread crumbs around until bottom and sides are coated, pour out excess.

  2. In a blender or food processor, add cubed tofu, egg whites, whole egg, milk, oregano, garlic, and 1/2 of the cheeses. Cover and blend until smooth. Salt and pepper to taste.

  3. Pour mixture into a large mixing bowl and fold in diced onion and drained corn. This is where you would add optional ingredients if you wish.

  4. Bake uncovered in a 350 degree oven for 30-35 minutes or until a knife inserted near the middle comes out clean.

  5. Cut tomato into thin wedges and arrange on top of quiche. Add remaing cheeses on top and bake for an additional 3-5 minutes or until cheese begins to melt.

  6. (If you like a crisp top, broil it on LOW for about 3 minutes until cheese begins to brown.

  7. Garnish with Parsley and serve immediately.

  8. The consistancy of this is similar to ricotta cheese and the flavor is very mild. Don't tell the picky one in the family that it is tofu and they will never know.

I do love Quiche, especially spinach. I am going to try this one also. I tried your meatloaf last night substituting ground turkey. I like the idea I have most of the ingredients on hand for your recipes.lol Keep them coming.

We served this tonight and though my husband didn't care for it...the rest of us liked it. If you like Quiche, you will enjoy this recipe. Twist it up, and make it your own. Have fun with it.
