  1. Scramble the eggs to your liking. Cut the pita in half, place on a skillet until it "opens". Fill with eggs, top with your favorite salsa (or if you don't have one handy, chop up a tomato, onion and peppers and cook until softened), sprinkle with scallions and enjoy a quick breakfast. If you think it's very easy and not impressive, you're only halfway right. It really is simple to make, but it's packed with flavor.
