Artichoke Chicken

  • 4 Chicken breast washed and deboned

  • 1-can of artichoke hearts in olive oil

  • mushrooms sliced as much as you would like to use

  • 1/4 c red peppers sliced in small chunks about an inch in length

  • 2-3 gloves garlic sliced thin

  • salt and pepper

  1. Marinate chicken in the mixture of all the ingredients for at least 2 hours.

  2. Preheat oven 350 degrees

  3. place marinated chicken in a cooking dish like a lasagna dish covered and bake for 45 minutes.

  4. Uncover and serve with rice or anything else you would like to use.

Have boneless breast marinating right now…think I'll add artichoke hearts…don't drain them?

Chicken and Artichokes are my favorite combination. I am going to give this recipe a try.
