Curried Pork Kabobs

Ingredients
  • 1 lb boneless pork loin , cut into 1/2-inch cubes

  • 1 cup low fat plain yogurt

  • 2 tbsp orange juice

  • 1 tbsp ground coriander

  • 1/2 tsp ground turmeric

  • 1/2 tsp ground cumin

  • 1/2 tsp salt (optional)

  • 1/4 tsp ground ginger

  • You will need barbecue skewers. Soak over night in water so don't burn.

Directions
  1. In medium bowl, stir together yogurt, orange juice and seasonings; add pork to bowl and stir to coat with marinade. Cover and refrigerate 4 to 24 hrs.

  2. Remove pork from marinade , shaking cubes gently to remove excess marinade. Discard remaining marinade.

  3. Skewer pork evenly on skewers. Grill over medium hot fire, turning frequently, for about 10 minutes, until nicely browned.
