Blueberry Muffins

  • 1 cup almond flour

  • 1 cup brown rice flour (or whole wheat pastry flour)

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • wet ingredients

  • 2 eggs beaten

  • 1/3 cup corn oil

  • 18 pkts. Truvia (to equal 3/4 c. sugar)

  • 1 cup almond milk (Blue Diamond Unsweetened vanilla)

  • 1 teaspoon natural almond flavoriing

  • 1 cup fresh blueberries, rinsed & drained

  • 2 tablespoons white flour

  1. Pre-heat over to 375 degrees.

  2. Mix wet ingredients together in a large mixing bowl. In a smaller bowl, mix dry ingredients. Add dry ingredients to wet. Mix ONLY until combined (about 10-12 strokes).

  3. In a small mixing bowl add washed and drained blueberries. Add 2Ts. white flour to coat blueberries. This process will allow blueberries to be throughout mufin rather than sink to the bottom.

  4. Add blueberry mixture to muffin batter and only fold in lightly to mix blueberries into mixture. About 3-4 folds. Overbating will make muffins tough and they might turn grey in color.

  5. Spray a 12 cup muffin tin w/ PAM or line with paper liners.

  6. Add 1/4 cup of mixture (about in ice cream scooper full) into each muffin cup.

  7. Bake in a preheated over 375 degrees until muffins spring back when lightly touched. They should also be dry looking on top and slightly golden brown. About 18 mins or so. Let cool at least 15 mins before consuming.

Thank you for a recipe with no wheat- I am allergic to Gluten as well as Type 2 so food can get to be a challange.

I use brown rice flour as it's lighter.. and produces lightness in the muffin. Also… my systems reacts to wheat sometimes by spiking my BGL. You can use whatever flour you like.. but the brown rice flour is delicate.

Replace the brown rice with whole wheat flour. They now sell whole wheat flour in the stores. Also I eat blue berry WHEAT Pancakes and blue berry muffins made with whole wheat only. Nice recipe you in here though :)
