Cucumber and Onion Salad

Ingredients
  • 2 1/2 cups thinly sliced unpeeled cucumbers

  • 1/2 cup thinly sliced onions

  • 1/3 cup SPLENDA┬« No Calorie Sweetener, Granulated

  • 1/3 cup white vinegar

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

Directions
  1. Place cucumbers and onions in a non-metallic, medium bowl.

  2. Combine remaining ingredients in a small mixing bowl. Stir well. Pour over cucumbers and onions. Cover and refrigerate for at least two hours. Stir occasionally.

  3. Note

  4. Serving Size: 3/4 cup salad

Our local grocery store use to have a version of this, although I'm sure they used real sugar. I use to buy by the tub I swear. I forgot about it until now. Thanks!

I've been making this salad for years, you can also use low or no fat sour cream and I peel and de-seed the cucumbers, place in a colander over a bowl with a bit of salt,I let them sit in the fridge, then I squeeze the water from the cukes having a much more pleasant taste and for people who find cucumbers "come back on ya" de-seeding helps this.

I tried this recipe, and loved it. I like all kinds of salads but don't do mayonnaise…so if you know any mayonnaise free recipes keep them coming.

Good recipe! Love these for a picnic as they travel well. If you don't drain them you can even get your serving of vinegar…LOL

I grew up eating this salad. I love it. We used cider vinegar without the sweetener with just a bit of dill weed. It is a great summer salad
