orange chicken

  • 4boneless skinless chicken breasts

  • 1/4tsp salt

  • 1/4tsp black pepper

  • 1/3cup white all purpose flour (about 1 1/2 ounces)

  • 2tsp olive oil

  • 2tsp unsalted butter

  • 1/2cup white wine

  • 1/2cup orange juice (about 2 oranges)

  1. Arrange chicken between 2 layers of plastic wrap.

  2. Using a meat mallet or rolling pin, pound to 1/2 inch thickness.

  3. Season both sides of chicken with salt and pepper and coat with flour.

  4. Combine oil and butter in a frying pan and heat over medium heat.

  5. Lay chicken in pan and cook 4 minutes per side.

  6. Take chicken out of pan and slice into thin pieces.

  7. Pour wine and orange juice into same pan and cook about 4 minutes or until sauce reduces and becomes thick.

  8. Spoon over top of chicken.

  9. Additional Information

  10. This works great over duck or beef.

A quick & easy alternative for orange chicken… I use SF orange marmalade [in the jelly section]

This will be on my menu very soon we all love stir fry here and orange just sounds all the better only downfall for me is since i regularly go low i will need to supplement the carbs as my cde wants me to have about 65 grams per meal love to all GREG
