Chicken Grape Salad

  • 2 cups mixed greens

  • 2 ozs of chicken or turkey cooked or use sliced

  • 2 stalks of celery chopped

  • 1/2 cup grapes sliced or quartered

  • 2 Tablespoons of Honey mustard dressing

  1. Mix ingredients together and enjoy.

  2. Meant to be eaten as a meal usually for lunch.

BTW, if anyone is interested, there is a website called NutritionFacts that allows you to enter many different foods and the weight of the food, and it generates a nutrition label for that particular food. Other sites do the same thing, but I like this one because they have what they call a RecipeBuilder. Enter your ingredients one at a time with amounts, and the site generates a nutrition label for the finished product. You have to determine the number of servings to divide into the total, but that's easy to do.

I made a similar salad last week. It was great. I didn't have a recipe, so I'll give general ingredients; you can make it to your taste.
I used DreamFields Rotini pasta, added sliced seedless grapes, dried cranberries, sun-dried tomato (julienned), sunflower seeds, shallot, celery, pepitas. Dressing was made from non-fat yogurt, Newman's Light Honey Mustard Dressing, some sweet pickle relish and some non-fat tartar sauce. Even my wife liked it, and she is pretty fussy about food.

I am using a diet that is from Prevention called "The Diabetes DTOUR Diet". That is where this recipe came from. You can go online and look at the book and what they say about it. It can be tailored to your eating habits. Included three meals and two snacks daily. Then you can choose between 1400 and 1600 calories a day plans. It has been one that I can follow easily.

I make this only on lettuc as hubby can't eat, he has IBS andy way I add hard boiled eggs and the rest and the salad is great.also honey poppy seed dressing is also great. momkjc

This recipe is also good with tuna and I sometimes add a bit of diced onion to perk up the flavor.
