Angel Hair Pasta w/Vegetables


  • 1/4 cup grated Parmesan cheese

  • 3 cups spaghetti

  • 1/4 cup veg broth or water

  • 1/4 lb mozzarella cheese

  • 1 cup broccoli florets

  • 1/2 lb angel hair pasta

  • 1/2 lb oil spray

  • 1 cup caulifower florets

  • 1/2 cup onion ,diced

  1. Cook pasta in broiling water about 3 minutes until just cooked throughout. Drain and keep warm. Srpay oil in a heavy nonstick skillet and heat over.medium high heat. Saute cauliflower, broccoli and onions 2 minutes. Add stock and continue to saute 4-5 minutes, until vegatable are tender. Stir in sauce and cook until heated through. Combine pasta w vegatable sauce in a serving bowl and toss. Sprinkle with mozzeralla and Parmesan cheese.

Is this recipe correct? It calls for 3 cups of spaghetti and 1/2 lbs angel hair pasta? Please clarify…thanks.

I don't agree with the poster about 77 g carb on a diabetic site! I count my carbs and punch it into my pump and get insulin for those carbs. The recipe sounds good and healthy with the veggies and even more healthy if you use the whole wheat pasta as the other poster said. I think I will try this recipe.

This sounds delicious, and to lower the carbs, could use the whole wheat pasta and leave out the mozzeralla cheese, add instead a few more veggies, such as zucchini and squash cut into slices and right before taking sauce off the heat, add some fresh spinach or even cut it up and add with the parmesan at the end as garnish.
