Watermelon Pops

  • 4 cups 1-inch cubes seedless watermelon

  • 1 tablespoon fresh lime juice

  1. In a food processor, combine the watermelon cubes and the lime juice and process until smooth. Pour the watermelon mixture into popsicle molds or into small paper cups and freeze until slushy, about 2 hours. Insert popsicle sticks and freeze until firm, at least 6 hours longer.

  2. Alternatively, freeze the watermelon-lime mixture in ice cube trays. Let the cubes soften slightly at room temperature and serve in deep-sided bowls with spoons. The pops or cubes will keep for up to 1 week in the freezer.

That I don't know. Maybe to keep the watermelon from going bad? There wasn't anything told about it in the recipe.
