Eggs get the royal treatment with healthy veggies and tasty seasonings in this breakfast delight.

Scrumptious Scramble
Ingredients
  • Ingredients

  • 1 teaspoon olive oil

  • ½ cup diced red onion

  • 1 ripe tomato, cored, seeded and diced (about 1 cup)

  • 4 large eggs

  • 4 large egg whites

  • 2 tablespoons water (optional)

  • 1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill

  • Salt and ground pepper to taste

  2. In a medium nonstick skillet, heat oil over medium heat. Add the onion, and cook for 2 minutes, stirring once or twice. Add the tomato and cook for 1 minute more. Transfer the onion-tomato mixture to a bowl and set aside.

  3. In a medium bowl, lightly beat together the whole eggs, egg whites and water (if using). Pour the egg mixture into the skillet and cook over medium-low heat, stirring frequently until the eggs are almost set.

  4. Drain excess water from the tomato mixture and stir the mixture gently into the eggs. Toss in the dill, season with salt and pepper and serve.

While I like the recipe, the nutrition evaluation is not correct. The 4 large eggs and 4 large egg whites alone have 737 calories which divided by 4 = 184 and not the 118 listed in the chart. Plus the olive oil, tomatoes and onion would add more calories, more fat and more carbs than the eggs by themselves. I don't understand why these recipes have the wrong info so many times but they do.

No grains! No sugar, no simple carbs…
Great recipe for diabetics and those who do not want to become diabetic.

Bear, I would expect the cheese to add to the cholesteral, possible the sodium a little bit, but the carbs shouldn't be affected at all. Sounds yummy. Might even add a little turkey sausage if your a carnivore like me.

I make this skipping the Dill (which I've never cared for) and adding a sprinkle of cheddar cheese on top. I'm sure that adds to the carbs, colesterol and sodium content—not to mention calories. But it sure tastes good.
