Marinated california mix

  • 1 Head Cauliflour

  • 2 Brocoli crowns

  • 1 red onion

  • 4 large carrots

  • 2 bolltes of lite italian dressing or make a vinagrette of your own liking

  • 1 large can of pited black olives

  • 1 large can of small whole mushroom or you can use fresh ones instead

  1. Cut the cauliflour and brocoli crowns into small flowerettes and rinse 2. drain thouroughly and place in a one gallon container. 3. whas and peel carrots and slice them thin as they are very crunchy and add to container. 4. dice red onion into whatever size pieces you like small or even leave as rings place in container 5. drain olives and mushrooms add to container. 6. add lite italian dressing and cover with a tight lid refrigerate overnight and you have a wonderful snack for just about anytime.

I've been looking for this recipe for awhile now… i get sick from olives so I'll exchange them for cherry tomatos instead… good summertime recipe to make when too hot outside to cook anything else;-)

I plan on making a spicy version by adding crushed red pepper and some fresh garlic in a home-made vinagrette

I must say…when i read the ingredents it made my mouth watery. HAHAHAHAHAHAHAHA mmmmmmmm… i love vegetables and so does my husband. I will make this and keep it in the fige and yes it sounds like great for a snack or maybe even lunch. Thank you for sharing.

Now this sounds like something I could snack on in the middle of the night when I get so hungry that it wakes me up. I love raw veggies so I will have two reasons to try it. Thanks for the great suggestion.

very good recipe and I make a similiar ; I boil cauliflower+1 small carrot.Mash them and mix with some skim milk+cheese and send to the oven in a glass tray.A good side dish with meat or chicken.
