Fresh Tomato Salsa

  • 4 large ripe tomatoes

  • 1 medium onion

  • 3 cloves minced or crushed garlic

  • 3 tblsp chopped cilantro

  • 1 tsp ground cumin

  • 2 tblsp olive oil

  • 1 or 2 Jalapeno peppers deseeded and deviened (depends on how hot you like it)

  • 1 tsp lemon juice (preservative)

  • salt and ground black pepper to taste

  1. Start by putting tomatoes through food processor or blender until almost pureed 2. add olive oil . 3. add cilantro onion, jalepono(s) and garlic blend a little more 4. add dry ingredients and blend for about 30 seconds chill and serve with meal as a condiment. This can also be used with grilled chicken fro a spicey mexican flavor.
