Baked Spinach Supreme
  • Ingredients

  • * 1 cup reduced-fat biscuit/baking mix

  • * 2 egg whites

  • * 1 egg

  • * 1/4 cup fat-free milk

  • * 1/4 cup finely chopped onion

  • *


  • * 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

  • * 1-1/2 cups fat-free cottage cheese

  • * 3/4 cup shredded Monterey Jack cheese

  • * 1/2 cup grated Parmesan cheese

  • * 2 egg whites

  • * 1 egg

  • * 1 teaspoon dried minced onion

  1. * In a small bowl, combine the biscuit mix, egg whites, egg, milk and onion. Spread into a greased 11-in. x 7-in. baking dish.

  2. * In another bowl, combine the filling ingredients. Gently spoon over biscuit mixture.

  3. * Bake, uncovered, at 350° for 28-32 minutes or until golden brown and a knife inserted near the center comes out clean. Yield: 6 servings.

The recipe sounds wonderful, but it is way to much cholesterol for me and my household. I am used to altering recipes, but I cannot figure out this one with one. Someone help.

Sounds wonderful! I might consider adding a dash or two of cayenne to the dish (as I do to all my quiche dishes too).

This dish could easily become a fish or seafood Florentino with the addition of crab, shrimp, or your favorite fish. In fact, the dish by itself still sounds plenty tasty. I love spinach!

The only thing i do different to this is add a bit of Jalapeno to it.. gives it a bit of kick!! This is a lot like a Spinach Quiche.. it is a favorite of mine!!
