Green Chili Chicken Bake

  • 1 tbs. olive oil

  • 2/3 c chopped onion

  • 2 1/2 cups diced green chili

  • 2 cups shredded chicken breast

  • 2 cups chicken broth

  • one garlic clove

  • 1 tbs corn starch

  • 1/4 c. whole wheat flour

  • 8 corn tortillas

  • 1 c. low fat extra sharp cheddar cheese

  1. Heat oil in a medium size sauce pan.

  2. Saute chopped onion in oil,add flour and cook for 1 minute.

  3. Add chili, chicken broth, garlic, simmer uncovered for five minutes.

  4. Mix cornstarch in 1\4c. cold water until lumps are gone. Add to chili\ chicken mixture and cook 2 more minutes.

  5. break tortillas into strips and divide into thirds.

  6. pour chili mixture into an 8x8 dish and stir in tortilla stripes.

  7. sprinkle cheese and bake in a 350 preheated oven for 20 minutes until cheese has melted and bubbly.

Wow this sounds great, and my wife would especially love it because olive oil and white chiken breast is used in it. we will try as soon as we can get all the ingredients together. Thank you for sharing.

This is a great recipe. The only change was I had a bag of mixed shredded cheese in the freezer and used that go raves at the pot luck. No leftovers. So I had to make it again.
