3 large ripe tomatoes (seeded & diced)
1/2 of large zucchini, chopped
1/2 of small red onion, finely chopped
1/4 cup snipped fresh basil leaves
1 garlic clove, pressed
2 tsp. balsamic vinegar
1/2 tsp. olive oil
1/4 tsp. salt
1/8 tsp. black pepper
2 Tbsp. grated fresh parmesan cheese (optional)
1 loaf french bread, sliced thin (optional)
Pre heat oven to 350*F. Arrange bread slices on baking sheet. Bake 10-12 minutes or untill golden brown.
In bowl combine tomatoes, zucchini, basil,garlic, vinegar, oil, salt and pepper; mix gently. Scoop mixture onto bread slices and spinkle with parmesan cheese and serve immediately.
