Garden Fresh Bruschetta

Ingredients
  • 3 large ripe tomatoes (seeded & diced)

  • 1/2 of large zucchini, chopped

  • 1/2 of small red onion, finely chopped

  • 1/4 cup snipped fresh basil leaves

  • 1 garlic clove, pressed

  • 2 tsp. balsamic vinegar

  • 1/2 tsp. olive oil

  • 1/4 tsp. salt

  • 1/8 tsp. black pepper

  • 2 Tbsp. grated fresh parmesan cheese (optional)

  • 1 loaf french bread, sliced thin (optional)

Directions
  1. Pre heat oven to 350*F. Arrange bread slices on baking sheet. Bake 10-12 minutes or untill golden brown.

  2. In bowl combine tomatoes, zucchini, basil,garlic, vinegar, oil, salt and pepper; mix gently. Scoop mixture onto bread slices and spinkle with parmesan cheese and serve immediately.
