Orange & Sprout Salad

Low in carbs, calories and fat, this yummy salad is light yet satisfying and nutritious.

Orange & Sprout Salad
Ingredients
  • For the salad:

  • 2 cups torn lettuce leaves

  • 1 cup fresh bean sprouts, washed and patted dry

  • 1/2 cup canned mandarin oranges, drained and rinsed

  • 2 stalks celery, sliced

  • 2 tbsp. toasted slivered almonds

  • For the dressing:

  • 2 tbsp. orange juice

  • 1 tbsp. cider vinegar

  • 1 tbsp. vegetable oil

  • 1/2 tsp. celery seed

  • 1/4 tsp. fresh ground black pepper

  • 1 tsp. equivalent of artificial sweetener

Directions
  1. Combine the lettuce, bean sprouts, oranges, celery, and almonds in a salad bowl.

  2. In a small mixing bowl, combine all of the dressing ingredients. Whisk until well mixed. Pour over salad and toss well. Serve immediately.

Thre is a part of this recipe that I dearly miss the bean sprouts. I do not have sprouts in my supermarkets. In Neww York everything you wanted was there in the gourmet markets.I will try this omitting the sprouts. I a to lazy to try to make my own.
