Sopa De Albondigas

  • 1 Tbs vegetable oil

  • 1 med onion

  • 2 tomatoes, diced (I cheat and buy 2 -14.5 oz cans low-sodium petite diced tomatoes)

  • 3 green chilies, seeds and membranes removed (I like to use poblanos)

  • 3 medium carrots, peeled and cut into 1/2 " slices

  • 2 Tbs Mexican oregano (divided)

  • 1 tsp crushed red pepper flakes (more or less, to taste)

  • 1 tsp dried parsley

  • 1 tsp basil

  • 1 tsp milk

  • 2 cloves minced garlic

  • 1 pound ground white turkey

  • 1 egg

  • 2 quarts drinking water

  • 1/2 cup dried bread crumbs

  • 1/2 cup long grain rice

  • 1 Tbsp low sodium beef boullion

  1. Cut onion and chilies into food processor then pulse to chop finely. (Or just chop everything very small by hand). Saute onion, chiles, garlic, and tomatoes in oil in a large pot until onion is tender. Add water, red pepper flakes, parsley, basil, and 1 Tbsp Mexican oregano. Cook over medium heat, stirring occasionally.

  2. Meanwhile, prepare the meatballs. beat the egg with 1 tsp milk then stir in the 1 Tbsp Mexican oregano. Mix in the ground turkey and dried bread crumbs. Form the meat mixture into small meatballs, dropping them into the simmering broth.

  3. Add the sliced carrots and boullion to the broth.

  4. 15 to 20 minutes before serving, stir the 1/2 cup rice into the broth. Lower the heat and allow the rice to cook.

  5. Notes:

  6. This recipe originally called for 1 Tbsp salt but I don't miss it. You can always add a salt substitute if you like.

  7. This freezes very well in serving-size containers. It makes a great lunch thawed and heated in the microwave.

Nutritional Facts

I've only computed the total carbs for this but I came up with 18.5 grams per serving.

could you use wild rice instead of long grain.It sounds wonderful as it is,but juut thought might have a few less carbs,and besides I like wild rice.
