Pineapple Poke Cake

Ingredients
  • 1 pkg yellow cake mix reduced sugar

  • 1 pkg small sugar free instant vanilla pudding

  • 1/2 c water

  • 2 eggs slightly beaten

  • 1/2 c egg subsitute

  • 1/2 fat free milk

  • 1/4 c unsweetend applesauce

  • 1 can (8oz)unsweetend crushed pineapple (undrained)

  • 1/4 c packed brown sugar

  • Frosting

  • 1 1/2 cup cold reduuced fat milk

  • 1 pkg small sugar free instant vanilla pudding

  • 1 carton (8oz)sugar free whipped topping thawed

Directions
  1. In a large bow,combine the first (7)ingredients Beat on medium spped for two minutes. pour into 13x9 baking pan coated with cooking spray

  2. Bake at 350 for 25-30 minutes

  3. meanwhile,in a small saucepan, combine pineapple and brown sugar. cook and stir until mixture comes to a boil. boil 4-5 minutes or until most of liquid is evaporated;cool slightly Remove cake from oven let cool slightly poke holes in warm cake with a fork spoon pineapple mixture evenly over cake cool completely.

  4. For Frosting

  5. in a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft set Spread over cake,spread whipped topping over pudding. Chill in fridge. and store any leftovers.

THIS CAKE IS AWSOME TASTES LIKE A PINEAPPLE UPSIDE DOWN CAKE BUT NOT ALL THE EXTRA CALORIES, CAN DECORATE WITH PINEAPPLE RINGS AND CHERRIES IF WANT TO FOR A FESTIVE DESERT. ENJOY
