Thick 'N Hearty Turkey Pot Pie

Ingredients
  • 2 cups Honeysuckle White Breast Strips, cooked and diced or use 2 cups Honeysuckle White Thighs, cooked and diced (or use leftover turkey)

  • 1 cup frozen mixed vegetables (we prefer corn, peas, carrots and potato)

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 (10 1/2-ounce) can condensed cream of mushroom or cream of potato soup

  • 3/4 cup skim milk

  • 1 tablespoon Miracle Whip light

  • Pastry for 9-inch double crust pie

Directions
  1. Mix all ingredients together in medium bowl. Pour into unbaked, prepared pie shell. Cover with a second prepared pie shell and flute the edges, sealing the top crust to the bottom crust. Vent crust with a sharp knife or fork tines several times to allow steam to escape.

  2. Bake at 350°F (175°C) for 30 to 40 minutes until crust is golden brown.

Looking at other other double crust turkey pot pie with simular ingredients the one I found with the least carbs was 33.4g of carb.

I'm concerned about the carbohydrate count in this recipe. Unless you've found an ultra low-carb pie crust, we usually count about 15 grams in one crust. So a double crust pie would be 25 to 30 grams of carbs in just the crust. Then you have to account for the carbs in the potatoes, corn, peas, milk, and even the soup. I would guess this is closer to 45 to 50 grams per serving.

While I think this recipe sounds delicious, I just wanted to make people pause and think about this for a minute.

I use cream of chicken soup instead of the cream of mushroom. Also I use an egg wash on the crust before baking..
