ZUCCHINI WITH BECHAMEL

Ingredients
  • * 3 pcs zucchini , no peeled ,cut into halves lenghtwise

  • * 6 ounce ( ~ 200 gr) low fat feta cheese

  • * some parsley , chopped

  • Bechamel

  • 1,5 table spoon olive oil

  • 1,5 table spoon flour

  • 1-1/4 cup skim milk

  • black pepper (optional)

Directions
  1. * in a wide pot boil the zucchinies for 6-7 min

  2. * take them out and leave for 10 min

  3. * smash the feta and mix with parsley in a deep dish

  4. * take a spoon and take out the zucchini seeds

  5. * fill the zucchinies with cheese mixture

  6. * put them in a non-stick tray and add some water to avoid any burn

  7. * heat the oven to 350 F and cook the zucchinies until the cheese melt

  8. * take out the tray from the oven

  9. Bechamel

  10. * put the olive oil & flour in a pot and stir at a low temperature untill the flour smells but still white (do not let to turn brown)

  11. * add the milk and keep stirring until the sauce starts boiling and gets thick

  12. * add the black pepper

  13. Now , spread the bechamel onto the zucchinies and re-cook at the same temperature untill bechamel swells
