Tomato Salsa

  • 1/2 small spanish onion,cut into three or four large pieces. 1/2jalapeno pepper seeded and coursely chopped, 4medium sized plum tomatoes seedee and quarted, 1/2 cup loosely packed cilantro leaves. Juice of 1 large lime ,pinch of coarse salt

  1. Put onion and jalj\apeno in food processor and pulse just until minced.Add tomatoes and pulse until jusr chunky and incorprated. add cilantro,lime juice and salt and pulse until cilantro is chopped and well distributed.Transfer to an air tight container and refrigarate for at least 2 hours to chill and let the flavors develope.will keep for up to two days
