  • 3 large,ripe plum tomatoes diced medium

  • i medium zucchini diced medium

  • 1 1/2 cups mustard greens, chopped

  • 1/2 tsp.dried italian herbs

  • 1/8 tsp.fresh cracked black pepper

  • 1 spray of olive oil cooking spray

  1. preheat oven to 350% F. Toss all ingredients together and place into suitable-sized glass or metal baking container.Bake for 10-15 minutes,uncovered,until zucchini is tender.

People used to think of greens being all soggy and cooked to death. That is mostly in the past. There are so many ways to use besides in salads.
