Brown Rice Side Dish

Ingredients
  • 1 cup water

  • 1 cup brown rice and 1/8 tsp salt.

  • 2 stalks celery- diced

  • 1/4 sweet red pepper-diced

  • 2 medium fresh tomatoes-diced

  • 1 small onion-diced

  • 1 - 2 tbs. virgin olive oil

  • 1/4 tsp. cumin

  • 1/4 tsp. rosemary

  • 1/4 tsp. thyme

  • 1/4 tsp. chili powder

  • 1/4 tsp. salt

  • 1 tsp. lime juice

Directions
  1. Boil the water then add the brown rice (cook rice about 30 minutes) Drain when it is tender/done.

  2. Add the remaining ingredients into a casserole dish, cover and microwave for five minutes.
