1 full egg
half glass of skimmed yoghurt
half glass of skimmed milk
3 table spoon of olive oil
1,5 glass of whole wheat flour
1 paket baking powder or 1 dessert spoon of baking soda
dried fruits (apple , appricot , raisin)
Preheat the oven to 175 C (345 F)
Stir the egg well and add milk&yoghurt and olive oil.Stir again until gets smooth.Then add flour&baking soda (or baking powder).Finally add the fruits you wish.I add 5pcs appricots (each divided 8 pieces) , 15 raisin (each divided halves) and 6 dried apple rings ( each divided 8 pieces) . Stir all of them and pour the dough into a small size non-stick tray (better if you oil the tray before).Cook for apprx 25 minuties untill colour change to golden brown.You may also add non-sugar cocoa but you also need to reduce the flour accordingly.
- I really don't know the facts however thinking that it's good for diabetics as the ingredients are very less and full of fiber due to the dried fruits.I usually divide the cake into 12 pieces each for 1 posrion however my husband always have 2
