Double Mango-Shrimp Salad

Ingredients
  • 3-Tablespoons picante sauce or salsa.

  • 1-Tablespoon mango or peach chutney.

  • 1-Tablespoon Dijon mustard.

  • 1-Tablespoon lime juice.

  • 4-Cups torn Boston or red leaf lettuce.

  • 6-Ounces medium or large COOKED shrimp,peeled and deveined.

  • 1/2-Cup diced ripe avocado.

  • 1/2-Cup ripe mango or papaya,diced.

  • 1/3-Cup red or yellow bell pepper strips.

  • 2-Tablespoons cilantro,chopped(optional).

Directions
  1. Combine picante sauce,chutney,mustard and lime juice in small bowl;mix well.

  2. Combine lettuce,shrimp,avocado,mango,pepper strips and chutney mixture; toss well and transfer to serving plates…

sounds good except for mango and papaya dont care for either one.Could you possibly use pineapple or peaches.Or maybe even apricots.
