Italian-Style Cream Pudding

Heavy cream and ricotta cheese make this dessert so rich and decadent. But with a tiny 6.5g of carbohydrates per serving, it won't ruin your blood sugars.

Italian-Style Cream Pudding
Ingredients
  • 1 packet unflavored gelatin

  • 1/2 cup cold water

  • 1 cup heavy cream

  • 3/4 cup granular Splenda or equivalent liquid Splenda

  • 1-2 teaspoons vanilla (see my comments below)

  • 15 ounces whole milk ricotta cheese

Directions
  1. In a medium pot, evenly sprinkle the gelatin over the cold water; let stand 5 minutes. Cook and stir over low heat until the gelatin is completely dissolved but don't let it boil. Whisk in the cream, Splenda and vanilla. Pour the cream mixture into a blender. Add the ricotta cheese. Blend on high speed until pureed and smooth. Pour into 6 custard cups or small dessert dishes. Chill at least 2 hours or until set.

I haven't rated this as I haven't tried it yet. I can't help but wonder if you couldn't get away with half n half and skim milk ricotta. It wouldn't be as rich but would sure have less fat. It sounds wonderful but 24g of fat seems like a lot.

hey that sounds great, going to have to try that one day soon. Being Italian never had that growing up but did have refrigerator cake which was awesome. this sounds good and will let you know how like it. decided to post a picture of a penguin just like them instead of my picture go figure
