  • Gazpacho

  • This summer, treat yourself to a bowl of delicious, garden-fresh gazpacho. This refreshing chilled soup originates from Spain and is easy to make. It's also good for all three Phases of the South Beach Diet.

  • Gazpacho (All Phases)

  • Serves 5

  • Ingredients

  • 2 1/2 cups tomato or vegetable juice cocktail

  • 1 cup peeled, seeded, finely chopped fresh tomatoes

  • 1/2 cup finely chopped celery

  • 1/2 cup finely chopped cucumber

  • 1/2 cup finely chopped green bell pepper

  • 1/2 cup finely chopped green onion

  • 3 tablespoons white-wine vinegar

  • 2 tablespoons extra-virgin olive oil

  • 1 large clove garlic, minced

  • 2 teaspoons finely chopped, fresh flat-leaf parsley

  • 1/2 teaspoon salt

  • 1/2 teaspoon Worcestershire sauce

  • 1/2 teaspoon freshly ground black pepper

  2. Combine all the ingredients in a large glass or stainless steel bowl. Cover and refrigerate overnight. Serve cold.

I add roasted jalapeno peppers and in a pinch , I add salsa. Add garbanzo beans to make it a meal. hot pepper sauce or green chilies really perk up gazpacho! Great as a snack for weightloss, I have lost almost 30 lbs. eating variations of this almost daily!!

I made a couple of substitutions, like tomato soup instead of tomato juice, and I didn't seed the tomatoes, and I didn't get the cucumber in there (didn't have one) and I mixed it all in the blender to make it a finer texture…and it was DELICIOUS. Thank you!
