Fresh Zucchini Dip

You’ll love this creamy, refreshing, low-calorie dip. Great for veggies, chips, or pita chips.

Fresh Zucchini Dip
Ingredients
  • 1 (8 ounce) package Low Fat cream cheese, softened

  • 3 tablespoons milk

  • 1 cup shredded zucchini

  • 3 tablespoons chopped fresh chives

  • 2 tablespoos chopped fresh parsley

  • 1/8 teaspoon salt

Directions
  1. Shred zuchinni and drain for till excess moisture is gone. In a medium bowl, mix cream cheese and milk until well blended. Mix in the zucchini, chives, parsley, and salt. Add a few drops more of milk if needed. Chill in the refrigerator approximately 1 hour before serving.

Made this today and it's delicious!! We used pepperoni dippers — put paper towels on a microwavable plate, put pepperoni slices on the paper towel, micro for 1.5-2 minutes and BAM, dippers without all that extra fat!! Yummers.

Made this last night, I really liked it. Now why didn't I ever think to do that. I never thought of using it in a dip. What a good refreshing taste. I will also use this when we do steak or chicken kabobs. Yummy!!…Debe
