Fresh Zuchinni Relish/Salsa

Ingredients
  • This is not a recipe for canning. It is to be served fresh.

  • 1 cup chopped zucchini

  • 1/2 cup chopped onion

  • 1 tablespoon splenda

  • 1 tablespoon chopped fresh basil

  • 2 tablespoons chopped red bell pepper

  • 2 tablespoons lemon juice

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

Directions
  1. In a medium bowl, stir together the zucchini, onion, splenda, basil, red pepper, lemon juice, salt and pepper. Cover and refrigerate until serving.

  2. Serve with meats, fish or top burgers or wraps…

I served a salsa with my dinner this evening, but it wasn't as nice as this one. Wish that I had read this recipe earlier in the day and I would have used this instead.
