Zucchini Slaw

Ingredients
  • This is not your usual "slaw". It is more of a side dish than salad.

  • 1 tsp. olive oil

  • 2 medium zucchini, finely chopped

  • 1/2 medium onion, finely chopped

  • 3 tablespoons Italian salad dressing

  • 1 bunch chopped fresh parsley

Directions
  1. Heat the olive oil in a saucepan over medium-low heat, and cook the zucchini and onion until onion is tender. Mix in the Italian salad dressing and parsley, and remove from heat. Serve room temperature.

Great use of this veggie! I'm going to have to make the Italian Salad Dressing. I can't find it ready-made here.
