Japanese Zucchini and Onions

Ingredients
  • 2 tablespoons vegetable oil

  • 1 medium onion, thinly sliced

  • 2 medium zucchinis, cut into thin strips

  • 2 tablespoons teriyaki sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon toasted sesame seeds

  • ground black pepper

Directions
  1. Warm the oil in a large skillet over medium heat. Stir in onions, and cook 5 minutes. Add zucchini, and cook, stirring, about 1 minute. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini are tender, about 5 minutes. Stir in ground pepper, and serve immediately.

  2. To make a heartier meal and add some protein, add some sliced or cubed firm tofu and a splash of rice wine vinegar before serving.

I already know just how good this is going to taste. My local Japanese take out spot uses zucchini and onion as a side dish for all of their combo dinners. It is the teriyaki sauce that makes this wonderful. It adds a truly unique flavor with the zucchini. A wonderful idea for a side dish!
