1 cup flour
1 teaspoon baking powder
8 oz. low fat sharp cheddar cheese (or any other flavor of choice)
1/2 cup vegetable oil
1 onion, chopped
1 tsp crushed garlic
2 pounds zucchini, peeled and diced
salt and pepper to taste
chopped fresh parsley
1.Preheat the oven to 350 degrees F (175 degrees C).
With the oil in a hot skillet, saute the garlic and the onion and zucchini till soft. Season with salt and pepper.
3.Sift flour and baking powder together into a bowl. Lightly beat eggs, and mix in cheese. Add egg mixture to the flour and baking powder.
Add in: cooled, sauted, veggie mix.
Pour mixture into a well-greased 9x13 inch baking dish, and sprinkle with paprika and parsley.
6..Bake in preheated oven for one hour.
