My Zuchinni Recipe of the Day.....Zuchinni Puff

Ingredients
  • 1 cup flour

  • 1 teaspoon baking powder

  • 4 eggs

  • 8 oz. low fat sharp cheddar cheese (or any other flavor of choice)

  • 1/2 cup vegetable oil

  • 1 onion, chopped

  • 1 tsp crushed garlic

  • 2 pounds zucchini, peeled and diced

  • salt and pepper to taste

  • paprika

  • chopped fresh parsley

Directions
  1. 1.Preheat the oven to 350 degrees F (175 degrees C).

  2. With the oil in a hot skillet, saute the garlic and the onion and zucchini till soft. Season with salt and pepper.

  3. 3.Sift flour and baking powder together into a bowl. Lightly beat eggs, and mix in cheese. Add egg mixture to the flour and baking powder.

  4. Add in: cooled, sauted, veggie mix.

  5. Pour mixture into a well-greased 9x13 inch baking dish, and sprinkle with paprika and parsley.

  6. 6..Bake in preheated oven for one hour.

Another great recipe idea to use those garden veggies! I'm going to try this one using my almond flour. That way I can get the carbs down to less than 10g.
