1/4 pound ham
1/4 cup each diced red and green peppers
1/4 cup diced sweet red onion
1/2 Tbs olive oil
1/2 cup shredded parmesean cheese divided
1 tsp Mrs. Dash original
8 beaten eggs or 2 cups egg substitute
Preheat oven to 350.
Saute pepppers and onions in olive oil 'til softened. Spray broiler safe dish (9X9 or 1 1/2 quart round) lightly with cooking spray. Spread ham and veggies in bottom of pan.
Mix beaten eggs with 1/4 cup of the parmesean cheese and Mrs. Dash. Pour over meat and veggies. Bake until eggs are just set about 20 to 25. Watch closely to avoid overcooking. Sprinkle with remaining cheese and run under broiler 1-2 minutes. Watch carefully.
Add 1/2 cup lightly steamed brocolli to peppers and onions.
Substitute 12 slices, crisply cooked and thoroughly drained bacon
Or 1/4 pound cooked and thoroughly drained bulk sausage.
Top frittata with thinly sliced tomatoes before sprinkling Parmesean cheese and plae under broiler3-4 min until tomatoes are throughly warmed. Watch carefully.
