1-1/2 cups zuchinni(grated like for potatoe pancakes
1/4 cup flour
1/2 t. garlic or onion powder or both
grate zucchini like you would potatoes for potato pancakes. Leave skin on zucchini. Drain in strainer pushing out some of the liquid. Add 1 slightly beaten egg, flour and garlic powder.
Drop by rounded tablespoons onto hot olive oil. Flip over when brown and brown other side. You can serve these plain or with sour cream, applesauce, use your imagination.
