Zucchini Pancakes

  • 1-1/2 cups zuchinni(grated like for potatoe pancakes

  • 1/4 cup flour

  • 1 egg

  • 1/2 t. garlic or onion powder or both

  1. grate zucchini like you would potatoes for potato pancakes. Leave skin on zucchini. Drain in strainer pushing out some of the liquid. Add 1 slightly beaten egg, flour and garlic powder.

  2. Drop by rounded tablespoons onto hot olive oil. Flip over when brown and brown other side. You can serve these plain or with sour cream, applesauce, use your imagination.

I froze some in the past but I didn't care for them after freezing. They sort of lost their crispy edges and surface.

With all the zuchinni coming available, I am looking forward to trying these. Can they be frozen once made?

I make these all the time. I chop some fresh onion in the food processor and also add some finely grated carrots for some color. I love these. They are great as part of a meal or as a snack.

I have a xuccini pancake recipe, but this one is alot simplier. I wiill definely give this a try…Debe
