Grecian Garden Salad

Grecian Garden Salad
  • 1-1/2 cup cut fresh asparagus, (1" pieces)

  • 3 medium tomatoes, seeded and chopped

  • 2 Tablespoons balsamic vinegar

  • 4-1/2 teaspoons chopped fresh basil or 1-1/2 teaspoon dried basil

  • 1 Tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 cup (4 ounces) crumbled feta cheese

  1. In a large saucepan bring 3 cups water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in iced water. Drain and pat dry. Transfer to a serving bowl. Stir in the tomatoes.

  2. In a small bowl, whisk the vinegar, basil,oil,salt and pepper. Drizzle over vegetables; toss to coat. Cover and refrigerate for at least 1 hour. Just before serving ; stir in the cheese.

Thanks for the asparagus idea!
For those who don't like asparagus, just make a caprese salad. It's sliced tomatoes, sliced fresh mozzarella, fresh basil leaves drizzled with balsamic vinegar and extra virgin olive oil. Salt and pepper to taste. So yummy, def a fav of mine.

This is a good recipe, I did substitute sea salt for the regular salt and squeezed a quarter lemon over it, it was nice and tangy

I live on greek food whenever possible, never seen a greek salad with asparagus before, and this is a bit on the sparse side as greek type salads go,,, very likited selection of veggies, I'd cut back on the tomatoes, and add some red onion and cucumber, tomatoes are rather high in carbs to begin with.

The salad looks good but I don't like asparagus is there any other green vegetable that be subsituted for the asparagus?

I wish that you had not posted this one. Now I have to go back to the store tomorrow for that cheese. This recipe just makes me want this right now! Great idea for a salad.
