Teryaki Zucchini and Onions

  • 2 tablespoons vegetable oil

  • 1 medium onion, thinly sliced

  • 1 garlic clove, minced

  • ~ 1inch ginger, minced

  • 2 medium zucchinis, cut into thin strips

  • 2 1/2 tablespoons (low sodium) teriyaki sauce

  • 1 tablespoon (low sodium) soy sauce

  • 1 tablespoon toasted sesame seeds

  • ground black pepper to taste

  1. Warm the oil in a large skillet over medium heat. Stir in onions, garlic and ginger and cook 5 minutes.

  2. Add zucchini, and cook, stirring, about 1 minute.

  3. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini is tender, about 5 minutes. Stir in ground pepper, and serve immediately.

Debe, I have a fabulous zuchinni bread recipe but it is not sugar free. Im sure you can adapt with Splenda, but I have never tried it. If you would like it I would be glad to post it for you.

This is so different than any of my zucchini recipes I have. I do enjoy learning and making different recipes. I think the neices here are getting tired of zucchini everyday, everywhich way. (LOL) But I have a lot more coming and the freezing is about to begin. One thing is there are so many different ways to cover up zucchini, the girls don't even realize their eating it…Debe

I saw the pic and it looks yummy! I printed the recipe and plan on making it soon. I love all of the flavors in this recipe. Might even toss in a few other veggies with it to make it a full meal. Thanks for sharing it with us Keek.
