2 Tablespopons Peanut Butter
8 Chocolate wafer cookies
2/3 cup vanilla ice cream (can also be no sugar or sugar free)
Spread Peanut Butter over flat sides of all cookies.
Spoon ice cream over peanut butter on 4 cookies. Top with remaining 4 cookies, press down lightly to force ice cream to edges of sandwich.
Wrap each sandwich in foil, seal tightly, Freeze for at least 2 hours or upto 5 days.
