Roasted Pepper Picante Chicken

Here’s a zesty, cheesy chicken dish you’ll love, and it’s quick and easy to make.

  • 4 ounces uncooked yolk-free egg noodles

  • 1 pound chicken tenders, cut into bite-size pieces

  • 1/2 cup mild or medium picante sauce

  • 1/2 cup chopped roasted red bell peppers

  • 1/4 cup water

  • 1/2 teaspoon ground cumin

  • 3 ounces shredded, reduced-fat, sharp Cheddar cheese

  1. Cook noodles according to directions on package, omitting any salt or fat. Drain.

  2. Meanwhile, place medium nonstick skillet over medium-high heat until hot. Coat skillet with nonstick cooking spray. Add chicken. Cook 2 minutes, stirring frequently. Add picante sauce, peppers, water and cumin. Bring to a boil. Reduce heat to medium-low. Cover. Simmer 10 minutes or until thickens slightly. Serve over noodles. Sprinkle with cheese.

This chicken would taste good to me if I only just added the Picante sauce. BUT, with all the other ingredients it is really going to be wonderful.
